Back to Work or Skool Lunchbox Ideas

I had a recent request to come up with some bariatric-friendly low Gi lunchbox ideas for those going back to work, college or school this autumn/fall. Lunchboxes can become all too predictable but they needn’t be.

 

Here are some of the ideas I came up with and some of the recipes you can also find on the website. Simply put the recipe title in the search bar and press to locate the recipe. Easy-peasy…go to the top of the class!

 

LOW GI LUNCHBOX IDEAS

* Tuna, onion and tomato salad with a wholegrain cracker

*  Avocado, chicken and lettuce wholegrain wrap

*  Greek salad with low-fat feta cheese, olives and a small wholegrain roll

*  Taco topped with Mexican beans, tomato, avocado and sprinkling of low-fat cheese

*  Flatbread wih hummous, tabbouleh salad or falafel

*  Stir-fried mixed vegetables with cubed firm tofu and low-fat sauce (eaten hot or cold)

*  Chickpea salad with ham or Quorn deli meat

*  Minestrone soup with small wholegrain roll (hot in a flask)

*  Wholemeal pasta salad with corn, flaked fish or chopped ham and salad

*  Sardines to have on toast or a crisp cracker with salad

*  Sushi rolls and a miso soup

*  Vegetable soup and a crispbread with low-fat cheese

*  Wholegrain crackers with cottage cheese and salad garnish

*  Multi-grain sandwich with hard-boiled eggs and salad

* Lentil, beetroot and low-fat feta cheese salad

*  Crustless quiche with salad

*  Savoury low-fat muffin (e.g. ham, corn and courgette)

*  Kipper pate, made with low-fat cottage cheese, to serve with a small wholegrain pitta bread/cracker and salad

*  Prawn and rice paper rolls mixed with shredded vegetables and a low-fat, low-sugar dipping sauce

*  A plain or sweet potato (to microwave) with a low-fat topping/baked beans and sprinkling of cheese

Coronation Chicken with Sweet Potato

Red Thai Pumpkin Soup

Turkish Tomato, Lentil and Mint Soup

Green Bean, Rice Noodle and Prawn Salad

    Oh my word, these lunch boxes are a great idea. I am 5 yrs post op and struggling for ideas eating the same thing. I will be trying some of these. Thank you, Susan

    Glad you like them Susan, we are also doing a new strand of lunchbox recipes on the blog. The first was last week and we have posted another meal idea today. The hope is to get a whole archive of recipes so that you don’t tire of eating the same thing. Carol x
