Maybe because it signals in our house and the www.bariatriccookery.com test kitchen the start of Spring, Shrove Tuesday or Pancake Day is one event in the food calendar that doesn’t ever get forgotten! We’ve sampled many a pancake over the years; flipped a few; and thankfully haven’t had too many sticky disasters.
Some 4 years out from surgery I still want to participate in every food ritual that my friends and family are enjoying so I do indulge – even if it’s just a forkful and no more. The sugar overload often dictates what size that forkful is and I have tried to limit the fat and sugar in some traditional pancake recipes to pass on so that you can enjoy them too.
I’ve also played around with recipes that I have been sent or alerted to like this one which uses just 1 mashed banana and 2 eggs, which is sort of ok but does seem a pure substitute for the ‘real thing’.
I’ve also been enticed and seduced by some which use special ingredients that are lower in sugar, use a sugar-like substitute or a chocolate-like sauce and all the rest – they’re ok at a push and, again, you might want to try them and see if they hit your taste-bud spot. But I still return to those that look like and taste like the real thing (have just been tinkered with to be a bit more healthy) and have been made from scratch. I guess what I am saying is that you can eat the traditional (in very small quantities); eat a bit more of those that are more bariatric-friendly; or forget — your choice, as it’s always been – just enjoy the celebration!
