In spite of being well organised on the food front, my plans for Christmas Lunch have been derailed a little by the news that my niece has now become vegetarian. Why was I the last to know?
Thankfully Sainsburys have saved the day because they have launched two vegetarian festive food alternatives that will fit the bill fantastically. I don’t want her to just double up on the vegetables or settle for a standard nut loaf, instead she is having their Taste the Difference Roasted Butternut Squash, Nut and Seed Roasts (that sound and taste so good I may forego the turkey myself). These include sweet roasted butternut squash with carrots, spinach, crunchy pumpkin and sunflower seeds with almonds and hazelnuts. They are oven baked for just 30 minutes, so can be put in the oven while the turkey is ‘resting’ under its foil cover.
The alternative is Spiced Lentil Bake…a blend of yellow split peas, green lentils, a rich tomato and onion sauce all seasoned with chilli, ginger and other spices for a nutty, earthy flavour. She’ll be having these on Boxing Day!
