Well the two might not look like they go together but they do. Last night at my support group, in Borehamwood, the talk was firstly all about support and then favourite ‘missed’ food.
There is no doubt that support groups are invaluable for pre- and post-op patients and those that attend do better long term. So I am going to start a new category on my site for those that are recommended. Check them out this weekend!
But onto pizza – ok, so you can’t have the fat-laden, deep and stuffed crust option anymore (without running the risk of regain or worse) but there still is a bariatric option. I have given a basic recipe and loads of variations in my new cookery book ‘Return to Slender’ but here is the version I had for lunch yesterday. Mama Mia it was great!
Chicken and Basil Pizza
Ingredients
1 low carb or wholemeal tortilla
2 tbsp tomato salsa
50g chopped cooked chicken
6 cherry tomatoes, halved
125g low or half-fat mozzarella, thinly
sliced
6 anchovy fillets
1 tbsp grated Parmesan
salt and freshly ground black pepper
fresh basil sprigs to garnish
Method
1. Preheat the oven to 190 C/gas mark 5.
2. Lightly grease a baking tray or line with non-stick bake-o-glide. Place the tortilla on top.
3. Spread the tomato salsa evenly over the tortilla. Top with the chicken, cherry tomatoes, mozarella, anchovies, Parmesan and salt and pepper to taste.
4. Bake at once for exactly 10 minutes. Serve cut into wedges, garnished with fresh basil, and with salad if liked.

My friend does a similar one with scrambled eggs on it also. Both sound delicious and I’m definitely having ‘pizza’ very very soon! May even convert my pre-teenage girls to some of your lovely recipes – which can only benefit them in the long run! xx

Sounds delicious Julie…I have been experimenting with an all day breakfast type one with turkey (raher than bacon) rashers, baby tomatoes, mushrooms and an egg. Stopped short of putting baked beans on too but bet it would be tasty! Scrambled eggs on pizza…now there’s an idea I hadn’t thought of. Carol
