I don’t often post special treats (aside from Easter and Christmas or Holiday time) but with Father’s Day on the horizon I have the perfect excuse! So here we have some very delicious chocolately treats that are actually very good for you – and perfect to serve to the main man in your life this Sunday.
Good for you? Well yes, because even though it’s hard to believe, these moreish mouthfuls contain no refined sugar and are packed with goodness from … wait for it …
beetroot and avocado. Not that you would know you might be having 2 of your 5 a day because a blind taste test here at Bariatric Cookery didn’t reveal one accurate guess as to what they were made up of – all tasters thought they might be wickedly high in saturated fat, sugar and carbs.
They can be made with virtually any low-sugar or sugar-free syrup of your choice – I have used Sweet Freedom and Sweet Freedom Choc Shot (the latter with a little extra granulated sweetener) but feel free to use your own favourite – the Davinci sugar-free syrups will work very well. My nutritional stats are based on using the Sweet Freedom alternative.
SUPER FOOD TRUFFLES
Ingredients
METRIC/US
1 large ready-cooked beetroot/beet (weighing about 100 g/4 oz)
1 medium to large ripe avocado, peeled and stoned
1/4 tsp vanilla extract
3 tbsp sugar-free syrup (I used Sweet Freedom)
100 g/11/3 cups unsweeteened cocoa powder
extra cocoa powder and desiccated coconut to coat
METHOD
1. Place the beetroot, avocado, vanilla, syrup and half the cocoa powder in a blender or food processor and process until well combined and smooth.
2. Add the remaining cocoa powder and process again until well combined. Transfer to a bowl and chill for at least 1 hour.
3. To finish, scoop large heaped teaspoonfuls of the mixture, then roll in your palms to form balls (the mixture will be slightly sticky but should form balls easily). Finally dust in extra cocoa powder or desiccated coconut to coat. Keep chilled until ready to serve. If placing in a box then keep the box chilled until ready to gift. The truffles will keep for about 1 week in the refrigerator (if they last that long!).
