Here’s a great fruit salad recipe that is delicious as a dessert but I think equally good as a breakfast or brunch dish at the weekend when there is perhaps a little more time to make and more to savour it. Fabulous with a spoonful of thick Greek yogurt or quark (and go the whole hog by sprinkling with some lemon zest and ground nutmeg. Now that’s what I call an ‘Easy Like Sunday Morning’ dish. I used an array of South African fruits in season at the moment.
SOUTH AFRICAN SPICED WARM FRUIT SALAD
Ingredients
METRIC/US
500 g/1 lb plums, halved and stoned/pitted
300 g/11 oz apricots, stoned/pitted and quartered
2 pears, cored and sliced
2 peaches, stoned/pitted and sliced
300 ml/1¼ cups unsweetened apple juice
50 g/1/3 cup sultanas/seedless white raisins or seedless raisins/seeded raisins
1 cinnamon stick
generous pinch of ground nutmeg
300 g/scant 1½ cups Greek fat-free yogurt
2 tsp grated fresh root ginger
1 tsp grated lemon zest
2 tsp clear honey
lemon zest and ground nutmeg to sprinkle to serve
Method
- Put the plums, apricots, pears and peaches in a large pan with the apple juice, sultanas or raisins, cinnamon stick and ground nutmeg. Simmer gently for 8-10 minutes. Cool until just warm, then remove and discard the cinnamon stick.
- Put the yogurt into a serving bowl and stir in the ginger, lemon zest and honey.
- Serve the warm fruit salad with the uogurt mixture, sprinkled with a little lemon zest and ground nutmeg.
