Many bariatric patients find the soft or pureed stage of eating (what I call the Amber Stage) one of the most challenging. Food in its entire form often tastes very different to its pureed, soft or mashable state. For that reason some typical family meals that the rest of the family are eating can be disappointing if just pureed smooth for the post weight-loss patient, and many look equally as unappetising! It’s a stage that cannot be hurried but thankfully it’s a short one and many of us have been equally grateful that our appetites have been seriously diminished during this time, so as not to be too trying.
I know of patients who have been inclined to try the offerings in the baby food aisle but to be grossly disappointed with the bland jars, tins and packets on sale. Don’t join them if you’re at this stage of eating post-op – there are many alternatives that are tastier, nutritionally better and cheaper to put together. Check out my ideas here.
This is an extra one – a lovely mixture of avocado, tender chicken and potato that literally sings with great nutrition in the form of protein, vitamins, good healthy fats and a little carbohydrate. The puree can be thinned to the right consistency for your stage after surgery from thin to thickish and much later can be mashed or pulsed in the food processor to a chunkier texture. Those who like more flavour can add some chopped herbs, a little chilli or spices to the mixture to ring the changes.
Avocado, Chicken and Potato Puree
1 small potato (about 300 g/11 oz before peeling), peeled and cut into chunks
50 g/2 oz skinless and boneless chicken thigh or breast
1/2 ripe avocado (I used a Peruvian Hass), peeled and stoned
2 tsp skimmed milk
salt and freshly ground black pepper
1. Steam the potato and chicken together for 25-30 minutes (or cook until tender in the microwave if you prefer).
2. Place in a blender or mini food processor with the avocado, milk and salt and pepper to taste. Puree until smooth or the desired consistency (thin with further milk if a runnier consistency is required).
MAKES: 1-2 WLS PORTIONS
