This last week has been manic and I am sure I am not alone when I say it’s hard to fit everything into 24 hours and then find the energy to start again the next day with another long list of things to do. Work is tricky enough, but add gift buying, festive menu planning, extended family visiting and preparing the house for the holidays to the mix and we have a ‘perfect storm’ for culinary madness! Some of us eat poorly during such a time; others forget to eat; and wise ones have a few tricks up their sleeves to cope.
I was persuaded by another WLS friend to consider these apple slices as a good snack idea when the going gets tough and I pass it on to you. It doesn’t take long to slice an apple and layer it with a smear of peanut butter and then top with some crunchy celery and a few raisins and seeds. And it’s just the sort of thing you can snack on when reserves are running low and know you getting some great nutrition. Try it and food wise it will serve you well for another hour or two ….
Healthy Peanut Apple Slices
Metric/US
1 apple
1½ tbsp reduced fat and no-added-sugar peanut butter
½ stick/stalk celery, sliced
1 tbsp raisins
1 tbsp pumpkin seeds
- Core and slice the apple into rings.
- Spread each slice with the peanut butter and scatter over the celery.
- Dot with the raisins and sprinkle with the pumpkin seeds to serve.
