It’s been getting hot in the Bariatric Cookery HQ and to be honest we’ve scaled down on the cooking while this warm weather interlude is here. We haven’t abandoned great-quality bariatric eating however, just fixed our energies on making something without the oven and energy-sapping hassle. This is one of the dishes we’ve been feasting on ….
It’s a high protein coconut cream and fruit pot that tastes just as good as it looks. It’s made with vanilla protein powder, coconut milk, yogurt and fruit – very fresh, very nutritious and very cooling. Take a taste and see for yourself.
RETURN TO SLENDER COCONUT CREAM POTS
30 g/1 oz your chosen bariatric-friendly vanilla protein powder (I used 3 scoops of the Slender Blend vanilla protein powder from Protein World)
175 g/6 oz fat-free Greek yogurt (I used Fage)
100 ml/generous ½ cup coconut milk (I used Alpro Coconut Milk)
1 Kiwi fruit, chopped
100 g/4 oz fresh pineapple, chopped
½ tsp desiccated coconut
- Place the protein powder, yogurt and milk in a blender and pulse or blitz to mix until thick and smooth. Spoon or pour into a serving tumbler or cup. Chill in the refrigerator to firm.
- Mix the kiwi with the pineapple and spoon over the top of the yogurt pot. Sprinkle with the coconut to serve.
VARIATION: We have also made this in our Bariatric Portion, Cook and Serve Measuring Cups topped with a mixture of fresh berries – the 1/2 cup size is perfect for 3 small early-stage bariatric portions.
