So research (although not authoritative or quantifiable) tells me you want easy and super simple for some of your meals, especially during the week. Here is one that I use frequently and since time is of the essence I am not going to spout on too long about it – save to say if you don’t care for Parma ham then use another deli type one instead that you do – more than simples!
PEACH AND PARMA HAM SALAD
Ingredients
METRIC/US
2 handfuls salad leaves (I used a superfood variety from Aldi)
1 courgette, spiralised or about a handful of ready prepared courgetti
100 g/4 oz light feta, cut into chunks
10 cherry baby tomatoes, halved
4 slices Parma ham
2 ripe peaches, each cut into 8 wedges
low-fat cooking spray or mist
1 tsp chopped fresh thyme
salt and freshly ground black pepper
drizzle of balsamic dressing or other fat-free or low-fat dressing of choice
Method
- Divide the salad leaves, courgette, feta, tomatoes and ham between two (or more) serving plates.
- Spritz the peach wedges with low-fat cooking spray or mist. Heat a griddle pan until hot, add the peach wedges and cook until just tinged brown, turning over once – just a couple of minutes.
- Scatter the peach wedges over the salad, season to taste and drizzle with dressing to serve.
