Cauliflowers make wonderful, year-round salads and at the moment I am a little bit in love with this Waldorf style one. You can make it using white, purple or the beautiful green Romanesco variety of cauliflower. The brightness of the apple and the crunch of the nuts make this a perfect lunch or starter dish but it would also make a fabulous side salad to accompany warm or cold roast chicken.
Remember to choose a low-fat blue cheese for the salad to keep the fat content down as much as possible. Choose a mild or strong version according to taste.
