The heat continues for some of us with balmy (and sometimes humid weather) and many are still celebrating the holidays even though the end of the summer is on the horizon. One of my many requests is how to celebrate with a special drink when entertaining, friends visit or there’s a special event (oppiversary perhaps?) to cater for.
Here’s a recipe for a Berkshire Iced Tea that we tried here at Bariatric Cookery this last weekend. Some of us had it with the booze added and some of us had it virgin style without – both got the thumbs up! So if you’re faced with guests who falter at the ‘no booze’ stance and won’t appear if it’s not on the menu, and others who balk at the idea of another glass of flavoured water, then here’s the answer.
The recipe below serves 1 but can be doubled, tripled, quadrupled or more for a crowd. As a cocktail it has less than 90 calories and as a mocktail less than 25 calories – which we think is pretty good compared to most iced tea offerings. Taste it and see …
BERKSHIRE ICED TEA
1 lemon and ginger flavoured tea bag (or your own particular favourite)
250 ml/1 cup boiling water
3 tbsp/¼ cup 100% grapefruit juice
1 tbsp vodka (optional)
1 tbsp rum (optional)
lemon slices and mint sprig to garnish
- Place the tea bag in the water and allow to steep or brew of 5 minutes. Remove and discard the tea bag and allow to cool then chill.
- Once cool, mix in the grapefruit juice, vodka and rum if used (or omit for a ‘mocktail’).
- Pour into a serving glass over ice and garnish with lemon slices and a sprig of mint.
