Firecracker Turkey Skewers hi res

The sun has made a welcome appearance today, so, rather than cook a roast I am going to barbecue. This bariatric-friendly turkey recipe is a family favourite!

Firecracker Turkey Skewers

Ingredients

450g turkey steaks, cut into strips
4 tbsp hot mango chutney
4 tbsp reduced-fat coconut milk
juice of 1/2 lime
2tbsp chopped coriander

Method

1. Thread the turkey strips onto skewers and place, side by side, in a shallow dish.
2. Mix the mango chutney with the coconut milk and lime juice. Spoon over the turkey, turn the skewers over, cover and leave to marinate for 3-4 hours.
3. To cook, remove the skewers from the marinade and barbecue or grill for about 5 minutes, turning and basting with the marinade frequently, until tender and cooked.
4. Serve hot, sprinkled with the chopped coriander.
