This year’s Mother’s Day is likely to be a mild and sunny one….so it’s the perfect time to have some lighter dishes on the menu. A roast on Sunday is a must for many and I am looking forward to sitting back and letting my children cook a roast for me.
My daughter, a good cook, will roast a chicken I’m sure…it’s something of a signature dish of hers and very different from my own. She opts for lemon, herbs and seasonings and cooks at speed, whilst I, in the past, would go for a heartier stuffing and a longer, slow roast. Now we meet in the middle….with a tender slower-roast chicken flavoured with herbs, garlic and lemon cooked so that my post wls requirements are met.
This is the recipe I worked incredibly hard on for my latest ‘Return 2 Slender…Second Helpings’ book. It’s in there on page 41 and is simply served with a vegetable gratin. Pudding couldn’t be simpler…I’m suggesting an apple and nectarine crumble…you’ll find the recipe in the green section and on the home page (under latest recipes).
