I’m a huge fan of our Queen Elizabeth and now she celebrates her 90th birthday today. I love the way that she built a foundation on the deep roots of her family and faith and dedicated herself unswervingly and tirelessly to duty. She’s often been criticised for being too traditional but it is now her old-fashioned values and steadfastness that have made her someone to be admired and emulated the world over.
We shall celebrate in June for the formal birthday with some special new
recipes but for now have a reliable treat or two from our archive to say ‘Thankyou, Ma’am’
We’ll raise a cup or two with tea this afternoon (one of our friends dropped in with some special teabags for the occasion) or maybe coffee this morning, and nibble on a regal cupcake or two. A great chance to make and eat our Cupcakes again (recipe here).
We will also undoubtedly keep the theme going (any excuse!) and make that special royal dish Coronation Chicken (recipe here) – maybe served on a bariatric portion plate at lunchtime but if the weather is favourable taken outside in the bariatric bento box for al fresco eating – perhaps even on a rice cake, on mini potato skins or with a baked sweet potato
