Will you be staying up all night to check on the US election results? With Romney and Obama running neck and neck it looks like it will be a nail-biting race to the line.
We’ll certainly watch during the key time periods and make it an all American affair with burgers for supper. I make mine very simply with very lean minced beef, chopped onion and just a little beaten egg to bind. Where I go a bit over the top is with the accompaniments. Red onion, low-fat cheese and tomato slices are a must. Sliced dill pickles and low-sugar ketchup/catsup are optional. If I want to push the boat out then I also serve with a sort of mayo made with mashed avocado, squeeze of lemon or lime juice, low-fat soured cream or yogurt and Tabasco to taste.
I don’t tend to serve my burgers in a bun but choose to wrap them instead in a few leaves of crisp lettuce. They taste just as good but can be equally as messy to eat. Don’t forget the paper napkins!
