Crab and mango salad with lime and chilli dressing

This mouth-watering salad is quickly made if you buy fresh dressed crab from the fish counter in your supermarket. It is finished with a chilli and lime dressing made with a ready-prepared fat-free French dressing. You can however use your own home-made dressing – you’ll need about 3-4 tbsp.

 

CRAB AND MANGO SALAD WITH LIME AND CHILLI DRESSING

Ingredients

2 dressed crabs, about 130 g each

1 medium ripe mango, peeled and sliced

1/2 cucumber, thinly sliced

10 g fresh mint, chopped

100g watercress

3 tbsp fat-free French dressing

finely grated rind of 1 lime

juice of 1/2 lime

1 tsp chopped fresh red chilli

salt and freshly ground black pepper

1.  Remove all the light and dark meat from the crab shells and place in a large bowl. Add the mango, cucumber, mint and watercress and toss gently to mix.

2.  Place the dressing, lime zest, chilli and salt and pepper to taste in a small bowl and whisk gently to blend.

3.  Divide the salad between 4 plates and drizzle with the dressing. Serve at once.
