CORONATION TURKEY
If you’re still looking at a half-eaten Christmas turkey then here’s a great way of using up the leftovers! This recipe makes a great buffet table high protein dish but is also very good as a topping for a jacket potato or a sandwich filling – and so much better than anything you’ll buy ready-prepared.
Ingredients
2 tbsp extra-light mayonnaise
2 tbsp fat-free thick Greek yogurt or low-fat Mandarin yogurt
1-2 tsp curry paste (strength according to taste)
juice of ½ orange
200 g/7 oz cooked skinless turkey, diced
¼ red onion, finely chopped
2 chopped soft dried apricots or 6 halved grapes
25 g/1/4 cup toasted flaked almonds
salt and freshly ground black pepper
Method
1. Mix the mayonnaise with the yogurt, curry paste and orange juice to make a smooth sauce.
2. Add the turkey, onion, apricots or grapes and salt and pepper to taste, mixing well.
3. Chill until ready to serve.
