It’s that time of year again when we hollow out pumpkins (or open cans) to make our special pumpkin pie dessert. Every year I also buy a new batch of pumpkin pie spice in the certain belief that the old one from last year is now stale. What a waste! So this year I am looking at new ways to use this flavoursome spice blend. So far I have tried it in a protein ice cream mix (delicious since you ask) and also in some protein bites (little rolled balls of protein powder mixed with oats and pumpkin then rolled in more oats a bit like a healthy truffle) but the easiest way has been to add it to my favourite Click drink to make a Pumpkin Spice Smoothie. I love it icy cold but you can drink it warm by heating in the microwave and perhaps topping with a squirt of sugar-free whipped cream.
A great way to start or finish the day and loaded with protein!

PUMPKIN SPICE SMOOTHIE
Ingredients
METRIC/US
6 tablespoons/1/2 cup low-fat milk
1/2 teaspoon pumpkin pie spice
1/4 teaspoon vanilla extract
250 ml/1 cup cold water
1 sachet or 2 scoops Click Espresso Protein Drink (see shopping page)
squirt sugar-free whipped cream (optional)
Method
1. Place the milk, pumpkin pie spice and vanilla in a shaker cup. Seal and shake to blend.
2. Add the water and Click Espresso Protein Drink. Seal and shake to blend thoroughly.
3. Pour into a serving glass and top with a squirt of sugar-free whipped cream if liked.
