Cheesy Quesadilla with Rainbow Bean Salad: The Bariatric Lunchbox Club Meal Idea 2

We had a great response to our first The Bariatric Cookery Lunchbox Club Meal Idea 1 – clearly it’s an area where you feel you need a bit of inspiration so that boredom doesn’t set in. Hopefully we can help you to get creative and liven up your weekday or even weekend get-away meals. Posting on a Sunday we also feel helps with prep for the week ahead.

I love this cheesy Mexican quesadilla recipe and have made with any number of tortillas – plain, seeded, wholemeal, high protein, low-carb and in varying sizes. For the stats below I have used a seeded protein one (so they may change if you use something different). It’s served with a protein-rich bean salad, filled with a colourful array of veggies. Add a little dressing if you liked but my 3 bean mixture was flavoursome enough for my taste.

Again this quantity is for one ‘normal’ size portion, about 2 WLS ones, depending upon your stage post-op.

 

CHEESY QUESADILLA WITH RAINBOW BEAN SALAD

Ingredients

METRIC/US

1 tortilla wrap (I used Super-seeded, Protein from Warburton’s)

30 g/¼ cup reduced-fat or high protein cheese (I used grated Eatlean low-fat protein cheese)

1 small spring onion/scallion, chopped

50 g/1/3 cup canned mixed bean salad 

2 tbsp chopped yellow pepper/capsicum

2 cherry tomatoes, chopped

1 carrot, peeled and chopped

salt and freshly ground black pepper

 

Method

  1.  Cut the tortilla wrap in half. Top one half with the cheese and the spring onion/scallion. Cover with the remaining tortilla wrap half, pressing down lightly.
  2.  Heat the tortilla for 1 minute on each side in a non-stick pan until lightly browned. Remove, allow to cool and cut into wedges. Wrap in foil if you like, then put into a lunchbox.
  3.  To make the salad, mix the drained three-bean salad with the pepper/capsicum, cherry tomatoes, carrot and salt and pepper to taste. Place in a separate container for the lunchbox.
  4.  Chill until ready to transport.

V suitable for Vegetarians

PROTEIN: 22 g

CARBOHYDRATE: 32.1 g

FAT: 4.6 g
