Nothing can be more British than a berry fool, and this one, using the best of British summer fruits, can be made all year round with a frozen mixture. Typically it would be made with cream but here it has been made bariatric friendly by using fat-free, thick Greek-style yogurt. This is suitable at the soft foods/amber stage of eating where the fruit retains a little texture but could be pureed until smooth if preferred. The rose water makes a wonderful addition but isn’t essential.
Rose-scented Mixed Berry Fool
Ingredients
300g frozen British summer fruit, thawed
2 tbsp Splenda granulated sweetener
1-2 drops rose water (optional)
250g fat-free, thick, Greek-style yogurt
Method
1. Place the fruit in a pan with the Splenda and heat gently until just boiling and the fruit is releasing its juice. Remove from the heat, transfer to a bowl, allow to cool, then chill for 1-2 hours.
2. When chilled, strain through a fine sieve and reserve the juice. Gently crush the fruit with a fork (or puree until smooth if at the soft foods/amber stage of eating). Add the rose water, if used, and mix thoroughly.
3. Stir the fruit into the yogurt and mix gently to combine, to give a rippled effect. Scoop into 2 glasses and drizzle with the reserved juices just before serving.
