Stilton is one of the great British cheeses and, because it has a good strong flavour, means you can use less to get a great cheesy taste. This is a wonderful dip to indulge in when you’re fed up with the same old guacamole or hummous in your lunchbox. Use vegetable crudites for dipping for a healthy light meal.
150g Cropwell Bishop blue stilton cheese, crumbled
150ml fat-free Greek-style thick yogurt
3 spring onions, finely chopped
1 tsp snipped chives
salt and freshly ground black pepper
1. Mash the stilton in a bowl with the back of a fork until it is broken up.
2. Add the yogurt, a tablespoon at a time and mash until well combined.
3. Add the spring onions, chives and salt and pepper to taste, mixing well.
4. Serve with vegetable crudites.
