Why spend a lot of money on commercial breakfast bars, often full of sugar, when you can make your own healthy and nutritious ones? These weight-loss surgery friendly ones have wholegrain crispy cereal, oats and nuts in them and are bound together with honey and no-added sugar peanut butter. They will keep in a tin for about a week and are perfect for breakfast on the run! I shall also be handing them out at the weekend for Hallow’een – no one would guess they are a healthy treat. It should be noted, of course, that if you have a nut allergy or a problem with honey (bypass patients may) then they are not for you.
BARIATRIC BREAKFAST BARS
Ingredients
75g wholegrain Shreddies cereal
20g Rice Krispie multi-grain shapes cereal
65g flaked almonds 35g porridge oats
5 tbsp clear honey
150g no-added sugar peanut butter
Method
1. In a large bowl mix the Shreddies with the Rice Krispies, almonds and oats.
2. Put the honey and peanut butter in a small pan and heat very gently until hot but not boiling. Add to the cereal mixture and mix well to combine.
3. Spoon into a 20-cm square, shallow, non-stick cake tin (spray with a little Frylight if your tin is not non-stick) and level the surface, pressing down well.
4. Allow to cool then cut into 16 squares or bars to serve.

Hi Gail, it helps to use something a bit sticky like honey to sweeten and also bind. You could use agave nectar or sweet freedom for example or really any kind of liquid sweetener that would have the same effect. You might have to tinker with the sweetness level since they do vary a little in their sweetening power. At a push you might be able to use a fruit puree but it won’t have the binding power so the bars may well be a bit more crumbly. If you use something that works well do let me know it’s always good to have an alternative. C x
