A Hug In A Mug Treat-Time Cake/Dessert

I didn’t receive any chocolate this Easter … don’t feel sorry for me … trust me it’s a good thing! It’s the not the most pressing of my needs at the moment.

 

What I have missed however has been a hug and they have not been in evidence with all the social isolating and distancing advice. I was therefore pleased to see a recipe from my friends at Choc Shot who have produced a ‘Hug in a Mug’ recipe for those missing out. It is a bit of an indulgence and best shared with another … but don’t get too close unless allowed.

 

It has no added sugar – the sweetness comes from the Choc Shot, is high in fibre, entirely plant-based and tastes divine! Choc Shot is widely available (and also from their website) but if you cannot locate then use a sugar-free liquid chocolate syrup mixture instead for a similar result.

 

The beauty is that it is cooked extremely quickly in the microwave (or a bit longer in the conventional oven) so you can be dipping your spoon into this bariatric treat in next to no time.

 

There, that’s better isn’t it?

 

A HUG IN A MUG CHOC & RASPBERRY CAKE/DESSERT

Ingredients

METRIC/US

70 ml/5 tbsp unsweetened soya milk

½ tsp cider vinegar

1 tbsp unsweetened cocoa powder

45 g wholemeal self-raising flour/6 tbsp wholemeal all purpose flour sifted with ½ tsp baking powder

pinch of salt

1 tsp vanilla extract½

1 tbsp oil (I used rapeseed)

3 tbsp Sweet Freedom Choc Shot (or unsweetened liquid chocolate syrup)

about 6 raspberries

raspberries, blueberries and cherries to top (optional)

 

Method

  1.  Place the soya milk in a regular sized mug (not overly large) and stir in the cider vinegar.
  2.  Add the cocoa, flour, vanilla, oil and Choc Shot, mixing well. Finally fold in the raspberries.
  3.  Microwave on HIGH OR FULL POWER for 80 seconds (timings based on an 800 watt microwave). This will give a cake/dessert with a little gooey puddle of chocolate in the middle. If you prefer it cooked through then microwave for a further 20 seconds. If you prefer to cook in the conventional oven then bake for 20 minutes in a preheated moderate oven at 180 C/350 F/gas 4.
  4.  Serve topped with additional fruit if liked.

WLS PORTION: ¼-½

V suitable for Vegetarians and Vegans

 

CALORIES PER PORTION (using Choc Shot): 450

PROTEIN: 10.8 g

CARBOHYDRATE: 59.8 g (29.1g sugars)

FAT: 19.6 g
