I had 2 new messages today, one from Mark who wanted to remind me that I have had an easy journey bypass-wise with my surgery and that not everyone does. I agree Mark (although some days things don’t seem easy at all) but I have reminded myself that everyone’s journey is so very different and some can be tough. Mark has problems eating a lot of foods after bypass surgery and is now contemplating going veggie for a while. This is brave since it is difficult to get the protein you need without meat, fish and poultry. Although soya products and pulses with dairy can fill the gap.
Toni has just undergone a revision procedure and is now on Fluids for 4 weeks! So my attached recipe, I hope, will help both. It is a Beetroot, pomegranate and orange smoothie that should tickle the tastebuds and also the eye with its rich, vibrant colour. Both would also benefit from Claire’s dhal recipe, to be seen under latest recipes (tomorrow). I have even eaten this for breakfast it is so good!
But first the smoothie:
Beetroot, Pomegranate and Orange Smoothie
Ingredients
100 ml pomegranate juice
100ml orange juice
1 cooked beetroot
Method
1. Whizz all the ingredients in a liquidiser or blender until smooth. Serve plain or over ice.
