It’s been an expensive few weeks here at Bariatric Cookery – we’ve been buying as well as making gifts for the holiday season; investing in some new exercise kit more suitable to the weather conditions; and also ‘paying up front’ on some new IT changes for the website which you’ll see in 2017 (watch this space). So something has to give … and yet again our pantry/food store/freezer has come to the rescue just when the purse strings couldn’t be pulled any tighter.
Whether you’re looking for filling vegetarian dishes or want to save a few pounds/dollars — and hours — in the kitchen, look no further than your stock of canned beans or the bean aisle in your store or supermarket. Not only is the super-affordable ingredient packed with fibre, folate, and potassium, but beans are also low in fat and cholesterol, making them a heart-healthy choice, so you’ll be making a wise bariatric choice as well as saving on the pocket for a good meal or two.
Chances are, like me, you have a few cans sitting in the pantry (just delve towards the back of the shelves) along with some corn and perhaps peas all begging to be used, and since canned beans are already cooked, they’re ready to use immediately, which cuts down on prep time. So next time you’re at a loss for what to make for dinner, grab a can and whip up one of these flavour-packed recipes ….
