The Sweetest Serve

 From the first ball bounce of Wimbledon today I know my crush of the fortnight will be, as usual, for the strawberries! Plump, juicy and tantalisingly sweet they will be served in many guises here at bariatriccookery.com over the coming 14 days. We’ll have them at breakfast with porridge or granola; at lunch in a mix n’ match salad; as a cooling drink as the temperature and competition soars; and as a splendid treat to round-off a meal or tense time when a tie-break looms.  

 

Luckily the first recipe can suit most bariatrics.

Those newly post-op and veterans alike. Simply crush the berries for the former and mix with the other ingredients or slice and layer if you’re further out. Both taste amazingly good – so game, set and match for both sides of the net!

Strawberry and Orange Fool (strawberries sliced and layered with a choc shot topping) 

 

SWEET EVE STRAWBERRY AND ORANGE FOOL

Strawberry and Orange Fool (strawberries chopped or crushed for the amber/soft stage of eating post-op)

 

STRAWBERRY AND ORANGE FOOL

Ingredients

METRIC/US

400 g/31/2 cups whole strawberries, hulled (I used Sweet Eve variety)

juice of 1 orange

1-2 drops orange essence or extract (optional)

250 g/8 oz quark (or fat-free skimmed soft cheese)

300 g/generous 1 cup fat-free thick Greek yogurt (I used Fage)

3-4 tbsp granulated sweetener to taste

sugar-free chocolate sauce (optional) – I used choc shot

 

Method

1.  Chop or slice the strawberries according to which version you prefer –  the amber/soft stage option should be chopped or even mashed; and the green/eating for life option should be sliced. In both cases reserve a couple of strawberries for the decoration if liked. Place in a bowl and add the orange juice and orange essence/extract if used.

2.  In another bowl mix the quark with the yogurt and sweetener to taste. For the amber/soft stage option mix the yogurt mixture with the strawberry mixture then spoon into 6 glasses or dishes and chill for at least 1 hour. For the green/eating for life option, layer the strawberries with the yogurt mixture in 6 glasses or dishes and chill for at least 1 hour.

3.  Just before serving top all the desserts with sugar-free chocolate sauce if liked and the reserved strawberries.

V suitable for Vegetarians

 

CALORIES PER PORTION: 86

PROTEIN: 10.6g

CARBOHYDRATE: 10.4g

FAT: 0.2g
