Wishing all of my Irish friends and descendants a very happy St Patrick’s Day today.
However, realising that many WLS patients won’t be looking at green beer or green iced doughnuts for their celebratory fare here is a much healthier but just as festive alternative.
My Shamrock Smoothie is made with melon, kiwi, lime juice and mint and will make a great breakfast drink, refreshing glass during the festivities and if made with the optional protein powder a great way to get some much-need protein into a day’s diet.
The beauty of this smoothie is that it can be drunk even at the very earliest of stages after WLS (straining through a sieve is optional to remove any kiwi pips if they seem troublesome).
SHAMROCK SMOOTHIE
Ingredients
Metric/US
300g/2 cups cubed cantaloupe melon, frozen or well chilled
1 ripe kiwi fruit, peeled and sliced
2 tbsp fresh lime juice
25g/1 oz unflavoured soya protein powder (I used Holland & Barratt variety) OPTIONAL
mint sprigs to garnish
METHOD
1. Place the melon, kiwi, lime juice and protein powder (if used) in a blender and puree until smooth or well blended.
2. Divide between 2 glasses, garnish with mint and serve at once.
