A couple of weeks ago when I contemplated what recipe to post for St George’s Day, the skies were grey and there was a distinct nip in the air…so I thought perhaps a warming beef stew, casserole or roast. Ha! So caught out again!
So yesterday, with temperatures higher than on the Costa del Sol, we dusted off the barbecue, oiled the wheels and moved it into place for what I hope is the first of many barbecue meals.
But what about St George? Well I think he would approve of this English beef burger with horseradish seasoning and tomato and fresh mint salsa. Choose very lean beef and grill/barbecue/broil until just cooked for tenderness and do remember to chew, chew, chew!
HOT HORSERADISH BURGERS WITH SALSA
Ingredients
Metric/US
450g/1lb extra lean minced beef/ground beef
3 tbsp hot horseradish
1 tsp garlic puree
1 tbsp roughly chopped fresh parsley
dash of Worcestershire sauce (optional)
salt and freshly ground black pepper
Salsa:
1 large tomato, chopped
1 tbsp chopped fresh mint
1/2 green pepper/capsicum, deseeded and finely chopped
1/2 red onion, finely chopped
1/4 cucumber, finely chopped
juice of 1 lime
Method
1. Place all the ingredients for the burgers in a large bowl and thoroughly combine together. Divide and shape the mixture into 4 burgers. Cover and chill for 10 minutes before placing on a preheated barbecue or under a hot grill/broiler and cook for about 10-12 minutes turning occasionally.
2. Meanwhile, mix all the salsa ingredients together and season to taste with salt and pepper.
3. Serve the burgers hot, on a toasted baguette if liked, and topped with some of the salsa.
