Hopefully continued weight-loss or maintenance; a healthy and do-able fitness regime; and renewed energy and enthusiasm to make this a memorable year for all the right reasons.
My year on the whole has been an enjoyable one….although I have hiccups and challenges just like everyone else and sometimes some things are out of your control…that’s life! During these times I am so grateful for all your support and encouragement….there’s no better community than the WLS one when the chips are down.
So tonight…I shall raise a glass to you all and nibble on some crunchy chips (or crisps as we tend to call then in the UK) and wish all you good health, wealth and prosperity in the year ahead! They will be my Crunchy Dippers from ‘Return 2 Slender…Second Helpings’ book which I will serve with a tomato salsa but are good with any other low-fat, low-sugar dip.
Preheat the oven to 200 C/400 F/gas mark 6. Tear or cut two low-carb tortillas or wraps into triangles. Place in a single layer on a non-stick baking sheet and spritz generously with low-fat cooking spray. Sprinkle with salt and any other seasonings you like (dried herbs, curry powder, Parmesan for example) and bake for 5-10 minutes until just turning golden and crisp. Allow to cool then serve with dips, spreads, salsas and light pates.
