A quick canvass of my football loving friends indicates that most of them will be glued to the screen watching the England v Italy game tomorrow night with a pizza treat at half time!
Yes pizza and footie do seem to go together (at least that seemed to be my impression when visiting Wembley recently…little else but the often greasy and flabby triangles on offer!). Like most bariatrics, waist-watching friends and those who know what is good for them…we avoided these carb-laden dishes. However, pizza can be made in a much healthier way…see my Chicken and Basil Pizza below (made with a wholemeal tortilla base) and can be prepared and on the table in under 15 minutes. You can vary the flavourings and toppings enormously…instead of chicken consider ham, lean bacon, turkey, quorn strips and other lean deli meats. I have used a low-fat Mozzarella cheese but you can replace with any other hard or semi-soft cheese…even goat’s to ring the changes. I think tomatoes are a must but peppers and other cooked vegetables can be substituted…and as for herbs…I’ve used basil but try sprinkling with dried herbs provence, a pizza seasoning or rocket for a herby or spicy kick. Add to that chopped pineapple, sliced sausages, olives, capers etc etc and the versions as you can see are virtually endless and will suit all tastes.
